*This recipe is from the Mexican region of Durango
Ingredients
2 Tbsp Pork lard or your choice of oil
1.5 Pound Beef(boneless chuck roll/ Bistec ranchero sin queso)
2 tomatoes (or 3 Roma tomatoes)
1 large white onion
3 roasted poblanos
4 chiles pasados
2 to 3 garlic cloves
1 1/2 tsp Himalayan salt (adjust to taste)
1 tsp ground cumin
1 tsp black pepper
1 1/2 cups beef broth + 1/2 cup extra if needed
For extra spice add your choice of Serrano or jalepeño
