How to Cook Pork Steak
Pork, or “bologna” as it’s called in Italian is a very good choice for meat. You can either grill it in a pan, or on the top rack of the oven. Both ways give you a great meal. But if you really want to know how to cook pork steak, well here’s how. It’s not rocket science but some skills are required. And I’m going to share them with you.
First you need to get a good pork loin, preferably from a specialty store like Jams and Company or Barneys or even a better one from a local butcher. Now here’s how to cook a long, lean pork steak in just about thirty minutes. Set up your barbecue grill or smoker (if you have one) to medium high heat. Set your steak on the indirect side of the grill, away from the hot coals.
Don’t open the lid until the first side of the steak is done cooking
Let it cook completely, watching it carefully. When it’s half done, open the lid and remove the steak from the grill or smoker. This is delicious with a delicious sauce, just some tomatoes and your favorite herb, vinegar and mustard, or a butter sauce with onion, garlic, pepper, spices, Cayenne pepper and bay leaves.
Here’s how to cook long, lean pork steaks in a traditional bbq style restaurant. Most restaurants have a bbq gas bar at their restaurant. If not, they will have an indoor bbq grill where you can put your steak on and let it cook in its own juices. In some cases, the bbq chefs will add a bit of extra sauce if you don’t like the original bbq sauce. Some restaurants will put a sherry or white wine on the steak if you ask for it, but not everyone does.
Once you’ve taken the beef out of the fridge and allowed it to come to room temperature, you’ll want to pull it from the grill or smoker and set it up in the back yard to cook. If you want a very lean cut, you should put the marinated meat on one of your barbecue plates or an aluminum foil lined baking sheet. Set the meat on one of your skewers and cook, flipping once, until it is done. If you are a griller, you may move the piece of meat around periodically to give it a different direction as well as to cook it evenly.
Here’s how to cook pork chops
First, you’ll want to pull the pork chops from the refrigerator and rinse them off completely. Then, line up the meat on the grill or smoker with the drippings (from the marinade) remaining on one side. Drippings will prevent the juices from thinning out the sauce, so be sure to leave plenty on the side for the next step.
Add the onions, garlic and herbs to the drippings
Season the meat with salt and pepper and mix in the olive oil. Once the oil mixes in with the meat, it will create a good cooking paste that you can use to seal the meat in place while you cook. Using this paste will help your pork chop maintain it’s shape and allow the juices to penetrate deeply, maximizing the tenderness of the meat.
Place the steaks in your pre-heated oven for about one hour to brown and seal in those juices. Once done, use your basting brush to finish cleaning up. Place the steaks on a cutting board and let them sit for another ten minutes to allow the juices to drain before removing them from the oven. Your pork meat will be juicy and tender, and you’ll notice a huge difference in taste from the grocery store bargain!
