This winter, we all are looking forward to those long nights of ice-cream, pumpkin pie, and all other yummy delicacies we can get out of the oven. This is one of my absolute favorite winter meals vegetarian recipes that I have ever had the pleasure of preparing for my family. I actually made this while at Thanksgiving! The gourmet stuffings consist of turkey bacon, swiss chard, and pumpernickel; all of which are mixed together with cranberry sauce to yield a mouth-watering treat. Gordon Ramsay even recommends that you take the stuffing toasted, rather than frying, as it makes a much more flavorful treat.
This gourmet brown rice and barley soup is so hearty and filling that you would defiantly stay warm and cozy with it. It consists of a beef and broccoli base soup coupled with some carrots and celery. If you are feeling a bit under the weather, substitute with another hearty vegetable base such as lentil and dried porcini mushrooms instead. This dish is served with a baked potato, which compliments the soup very well.

It is not a very traditional dish and is one of those that will definitely put a smile on your face if served at the right time of the year – during the cold winter months!
