Easy starch solution meals for maximum weight loss is what I will be sharing with you today. These two recipes are quick and easy and great for weight loss, plus the are delicious! Here is what you will need for these easy starch solution meals.
RECIPE #1
BUTTERNUT SQUASH
Ingredients:
1 butternut squash peeled, seeds removed and chopped
4 stalks celery chopped
1 carrot chopped
5 small or 3 medium potatoes
1/2 large onion chopped
2 cloves minced garlic
2 cups veggie broth (I used no chicken broth)
1 tsp onion powder
1 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp salt
red pepper flakes (optional)
2 tsp each fresh herbs parsley, sage, rosemary and thyme finely chopped
(if using dry herbs use 1-2 tsp each)
Instructions:
Set instant pot on saute, add 3 T of water or broth and add onion, carrot, garlic, celery, potato, spices and saute for 5 minutes adding water or broth as needed. While veggies are sauteing, cut the ends off of the butternut squash and microwave for 4 minutes (this makes it easier to peel and chop). Let squash cool a bit then peel, cut, remove seeds and chop and add to instant pot along with the herbs. Turn off saute mode and pressure cook on high for 15 minutes make sure it is on sealing, you can let steam release naturally or you can do a quick release. I like to puree half of the soup and add it back it to the pot or you can puree the entire recipe, your choice.
RECIPE #2
SPRING ROLLS
Ingredients
rice paper wrappers
cabbage chopped
red onion chopped
julienne carrots, cucumber
large shallow bowl with warm water
Instructions:
Line all ingredients up.
place one wrapper in the warm water for a few seconds and lay down on a cutting board. Let is sit for a minute or so until it gets soft enough to work with but not too soft or it will tear.
On one edge add the veggies and the roll up away from you and tuck in the sides as you go. Continue making the spring rolls until all veggies are used up.
QUICK PEANUT SAUCE
Ingredients:
1/4 cup PB2 (powdered peanut butter)
3 T water
1 T coconut aminos
1 T maple syrup
1 tsp rice vinegar
ground ginger to taste
Instructions:
Add PB2 and water and mix well, then add the remaining ingredients and stir well. Using a whisk works best. If you want it to be thinner add more water and if you want it thicker add more PB2.
You can also use a sweet chili sauce for dipping as well.
