These are my current favorite recipes I’ve been eating on repeat. These are all delicious recipes you can eat and lose weight! Having lost 60 pounds I think one of the best lessons I have learned is eating what you love and enjoy , altering ingredients some like adding in more veggies or higher protein, and not restricting yourself from certain foods that the diet culture says to totally take away. Doing this really helps keep you accountable and makes weight loss sustainable. If your eating foods you enjoy and tracking your food intake / calories so you can stay in a calorie deficit than your more likely to succeed rather than eating foods you don’t enjoy and then quitting completely or over eating.

ALL RECIPES ARE BELOW AND CAN BE ALTERED TO YOUR PREFERENCE

• Beefy Thicky Chili recipe: I split this batch into 10 servings and 1/2 cup per serving for 239 calories
– 16 oz 90/10 ground beef
– 1.25 oz mild chili seasoning packet
– 2 tsp chili powder
– 1 tbsp dark brown sugar
– 1 white onion, chopped
– 15 oz can great northern beans
– 15 oz can dark red kidney beans
– 15 oz can diced tomatoes x2
– 1 cup beef broth
– 1/2 tbsp corn starch to thicken

instructions:
– chop your white onion, rinse your beans.
– Sautee onions in pan with olive oil spray until lightly cooked and brown then add your ground beef and half of your chili mix
– once beef is lightly cooked add in your rinsed beans, canned dice tomatoes, 1 cup beef broth , and remainder of the chili mix.
– I personally add more chili seasoning about 2 tsp of chili powder and add your 1/2 tbsp corn starch to thicken.
– let simmer with a lid for 25 minutes on low heat

🥔SERVE
with a baked potato , sour cream, and green onions

tip: for baked potato I microwave for 10 minutes prior to baking so they are soft inside and cooked through, less cooking time in oven,
and they turn out great this way with a crispy outside and soft inside. Cook potatoes In oven on 435 for 20 minutes

•Salmon + Veg Stir Fry roughly 320 calories for this dish
– salmon
– mushrooms
– zucchini
– wahl sauce

instructions:
– Chop your veg and Sautee in skillet with olive oil spray and salt and pepper
– cook your salmon , I cooked mine with lemon pepper, olive oil spray, and baked in oven
for 15 minutes on 380
– place food into a bowl and drizzle sauce on top

•Oatmeal Cookies: made 6 cookies , 1 cookie is 186 calories
– 1 cup quick oats or old fashioned oats
– 1/3 cup almond flour or any flour of your choice
– 1/4 cup chopped dates ( about 5 dates)
– 1 egg
– 1/4 cup sugar free maple syrup
– 1/3 cup semi sweet chocolate chips
– 1/2 tsp baking powder
– 1/2 tsp vanilla extract
– 2 tbsp dark brown sugar , divided

Instructions:
– chop your dates into small bite size pieces you want to fill up 1.4 cup of dates
– in a bowl combine all ingredients, saving 1 tbsp brown sugar for top of cookies
– mix together until cookie dough soft texture
– place cookies on a pan lined with parchment paper
– use 1 tbsp brown sugar to sprinkle on top of cookies, uncooked
– bake on 350 for 13 minutes
– let cool for 5 minutes before eating

•Air Fry Chicken Sandwich & Fries: 660 calories for everything
You could lower the calories if you use a low calorie bread
– air fry chicken on 400 for 20 minutes
– air fry sweet potato fries on 400 for 25 minutes
turning half way thru cooking time , sprinkle with sea salt
– assemble sandwich with toppings and sauce of choice
I used:
– lettuce
– tomato
– onion
– pickle
– avocado
– wahl sauce

•Potato & Egg ( enough for 2 to split)
483 calories for one serving
if you split with someone 241 calories
– 2 medium size potatoes
– 3 eggs
– fresh parsley, chopped
– 1 tbsp olive oil
– 1 tbsp water
– sea salt and black pepper

Instructions:
– slice your potatoes in thin slices
– in a skillet add your olive oil and let pan get hot
– place your potatoes into skillet in a circular form
– add 1 tbsp water , place lid on a cook until soft for about 12 – 15 minutes on medium high heat
– once potatoes are soft crack 3 eggs into skillet
– add salt and pepper, 1/2 tbsp water , and place lid back on
– cook additional 10 minutes on low/medium heat
– chop parsley

serve potatoes with fresh parsley , salt and pepper on top
